Lemon Loaf Recipe

Quick, easy cake that can be adapted for other flavours by omitting lemon juice.

Recipe Ingredients for Lemon Loaf

2 cups flour
2 tsp baking powder
1 cup granulated sugar
3/4 tsp salt
1/2 cup butter
1 egg
1 cup fat-free yogurt
1 tsp vanilla extract
1/2 cup lemon juice

Recipe Directions for Lemon Loaf

  1. Combine flour, baking powder and salt. Set aside.

  2. Cream butter until fluffy.

  3. As you continue to mix, add vanilla, sugar, egg & yogurt.

  4. When the wet ingredients are throroughly combined, slowly add dry ingredients.

  5. Mix until smooth, then add lemon juice.

  6. Pour into well greased & floured 8x4 baking pan.

  7. Bake at 350 for 60 mins, or until toothpick inserted in centre comes out clean.

  8. Remove from oven and let cool. Glaze, if desired.
