Light creamy tofu-based "pudding", great with fresh berries on top.

Recipe Ingredients for Lemon-Lime Tofu Pudding

8 oz Mori-nu, Tofu, Silken, Soft
0.25 avocado, NS as to Florida or California Avocados
6 Teaspoon Juice
1 tsp Lemon Peel
1 tbsp Pure US Grade A Clover Honey

Recipe Directions for Lemon-Lime Tofu Pudding

  1. Zest the peel of one small lemon and one lime.

  2. Squeeze the juice of 1/2 lemon to make almost 2 TBS, and the juice of 1/2 lime.

  3. Put all ingredients into blender or food processor and blend until smooth and creamy.

  4. Chill before serving.

  5. Top with fresh berries if desired.

  6. Note: Can substitute agave syrup for honey if desired.
