Recipe Ingredients for Lemon Lentil Soup

4 tbsp vegetable oil
1 onion, sliced thin
1 tsp cinnamon, or 2-2inch cinnamon stick
2 cups lentils, yellow or pink
2 tsp ginger root, chopped
3 cups chicken stock
1 tsp salt
1/2 tsp ground red pepper
1 lemon

Recipe Directions for Lemon Lentil Soup

  1. heat 2 tbl oil in deep saucepan

  2. when hot, add oinion cook until soft

  3. add cinnamon, lentils and ginger to pain stir about 10 min

  4. add stock PLUS 2 cup water salt and red pepper

  5. bring to a boin reduce heat and simmer 10 min

  6. squeeze the juice from the lemon

  7. Add lemon juice AND squeezed lemon shell cook for 50

  8. needs to be stirred alot.

  9. Toppings

  10. 1 small onion finely chopped

  11. 1 garlic clove finely chopped

  12. 1 fresh hot green chili chopped

  13. 1 bay leaves

  14. 1 t coriander leaves chopped

  15. Heat the remaining 2 tsp oil in small pan

  16. Add above items (what you want) NOT coriander

  17. cook until onion is browned

  18. add mixture to lentils

  19. REMOVE bay leaves

  20. Sprinkle with choped coriander

  21. serve hot
