From: http://www.elanaspantry.com/lemon-kale-chips/ (Recipe calls for 1 bunch... but to do the nutrition here I am calling for 8 cups chopped kale. That is 8 servings at 1 cup serving each.) We are loving these Lemon Kale Chips. I can't make enough of them --the boys scarf them down hot out of the oven. Yesterday, they ate 3 batches, yes you heard that right, 3 batches of kale chips, after school. Of course, like everything else I make, these are gluten free. You can use curly kale (as in the photo above), or dino (lacinto) kale or any other type. My boys say it is best with the curly kale.

Recipe Ingredients for Lemon Kale Chips

8 cups kale (1 bunch) (prepared and washed)
2 tbsp olive oil
2 tbsp lemon juice
1/4 tsp sea salt, celtic

Recipe Directions for Lemon Kale Chips

  1. 1. Preheat oven to 350 degrees F.

  2. 2. Chop kale into inch pieces.

  3. 3. Place kale in a large bowl.

  4. 4. With hands massage oil, lemon juice and salt into kale.

  5. 5. Place kale on parchment lined baking sheet.

  6. 6. Bake at 350 degrees F for 10-15

  7. minutes until kale is dark green and crispy

  8. 7. Cool and serve.
