A southern favorite! Super easy and fast! Save a little bit of calories by substituting Fat Free condensed milk and 2 packets of splenda instead of sugar.

Recipe Ingredients for Lemon Icebox Pie

2 eggs
10 oz sweetened condensed milk
1/4 cup lemon juice (fresh is best!)
2 tsp sugar
1/8 tsp cream of tartar
1 graham cracker pie crust

Recipe Directions for Lemon Icebox Pie

  1. Place a large metal or glass bowl into the freezer.

  2. Preheat oven to 350.

  3. Separate yolks from eggs. Place egg whites in a separate bowl for later. Place yolks into a medium mixing bowl.

  4. With hand mixer on high, beat yolks with lemon juice and condensed milk until thickened. Pour into crust and set aside.

  5. Rinse and dry beaters well.

  6. Remove bowl from freezer.

  7. Place egg whites into cold bowl and beat on high until doubled in volume.

  8. Add sugar or sweetener and cream of tartar to egg whites and continue to beat on high until volume increases and stiff peaks form.

  9. Spoon meringue into crust and arrange little peaks with spoon.

  10. Bake in the oven about 5-10 minutes just to lightly brown the meringue to your liking. Besides that, this is pretty much a no-bake pie.

  11. Set until at room temperature. You may want to chill slightly in the refrigerator so that your filling will thicken up some more.
