Traditional lemon pie with Eagle Brand

Recipe Ingredients for Lemon Icebox Pie

14 oz sweetened condensed milk
1/2 cup lemon juice
2 eggs
4 T butter
4 T sugar
30 vanilla wafers

Recipe Directions for Lemon Icebox Pie

  1. crush vanilla wafers

  2. mix with 2 T sugar and 4 T melted butter

  3. press into a pie pan and bake at 350 for about 8 mins

  4. separate eggs

  5. mix egg yolks and condensed milk together

  6. whisk until well blended

  7. whisk in the lemon juice

  8. when well blended, pour into the baked crust

  9. whip the egg whites until fluffy

  10. add 2 T sugar and 1/8 t of cream of tartar

  11. whip until sugar is desolved

  12. spread meringue on the filling, sealing to the edges

  13. bake at 360 degrees until the meringue is browned

  14. cool and refrigerate for 2 hours

  15. serve
