Herby and meaty without the cholesterol! Leftovers can be mashed with celery, red peppers and mayo for a wonderful sandwich filling.

Recipe Ingredients for Lemon Herb Tofu- baked

14 ounces extra firm tofu
2 tbsp olive oil
1/2 tsp oregano
1/2 tsp basil
1/2 tsp thyme
1/8 tsp pepper
1/2 tsp sugar
4 tbsp lemon juice
2 tbsp soy sauce

Recipe Directions for Lemon Herb Tofu- baked

  1. Slice tofu into 12 equal slices & pat dry to remove excess water

  2. Combine the remaining ingredients in the bottom of a 9x11 baking pan, mix well.

  3. Place tofu slices in marinade making sure both sides are coated.

  4. Bake covered with foil for 15 minutes, turn tofu slices over and bake uncovered for an additional 15 minutes.

  5. Serve.
