Lemon Herb Chicken Chard Sweet Potato

8 oz Chicken Breast
1/8 cup Basil, chiffonade
1/8 cup Sage, chiffonade
1 1/2 tsp Lemon Zest
1/2 tsp Kosher Salt
1 pinch Black pepper
1 oz lemon juice
1 1/2 tsp Garlic
1 tsp Extra Virgin Olive Oil
1 tsp Shallot
6 cup Swiss Chard, chopped
8 oz Sweet Potato, whole roasted

Recipe Directions for Lemon Herb Chicken Swiss Chard Roasted Sweet Potato

  1. Pre heat oven @ 375 for sweet potato, dock the potato (stab with for several times roast until fork tender.

  2. Cut herbs and zest rub on to chicken season with 1/4 tsp salt and pinch of pepper.Heat saute pan on medium heat, add 1/2 tsp oil place breast in pan, for 5 minutes then flip for another 5 minutes. Deglaze the pan with lemon juice, lower the heat and cover until internal temp. of 165 degrees.

  3. In another pan, on medium heat add 1/2 tsp oil garlic and shallots, saute. Add swiss chard saute until wilted.

  4. Remove potato from oven and serve.
