Great breakfast muffins with the zing of fresh ginger, tart lemon & juicy blueberries. The whole wheat pastry flour adds texture while keeping it light & moist.

Recipe Ingredients for Lemon Ginger Blueberry Muffins

1 1/2 cups whole wheat pastry flour
1 1/2 cups flour
1/4 cup sugar
3/4 cup brown sugar
1/2 cup ginger, chopped
2 tsp lemon zest
3/4 cup butter
2 eggs
1 1/2 cups buttermilk, lowfat
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
140 g Blueberries

Recipe Directions for Lemon Ginger Blueberry Muffins

  1. Preheat oven to 375 degrees.

  2. Finely chop ginger. Zest skin from two lemons with medium microplane.

  3. In small saucepan, cook ginger & 1/4 cup sugar till sugar is melted. Add lemon zest & mix well. Let cool.

  4. Whisk together flours, baking powder, baking soda & sale in medium bowl.

  5. In large mixing bowl, cream together butter & brown sugar till light & fluffy.

  6. Beat in eggs, one at a time, till well incorporated.

  7. Alternately add 1/3 of buttermilk, 1/2 of dry mix, and continue adding, ending with buttermilk.

  8. Mix in blueberries.

  9. Fill muffin tins with cupcake liners. Add batter to 3/4 full. Bake for 25-30 minutes, or until cake tester comes out clean.
