Recipe Ingredients for Lemon Ginger Asparagus

8 ozs fresh asparagus
2 tbls chicken broth
1/2 tsp fresh ground ginger
1 tsp fresh lemon juice
1 tbls minced scallions
1/4 tsp salt
1/2 tsp black pepper

Recipe Directions for Lemon Ginger Asparagus

  1. Bring 1-2 inches of water to boil in a medium skillet. Place asparagus in skillet, reduce heat to medium an cook until tender-crisp, about 6-8 minutes, drain well and place asparagus in a large serving bowl.

  2. In a cup, combine broth, ginger, lemon juice, scallions, salt, and black pepper. Set aside for 30 minutes to marinate. Yields 4 servings. (0) points per serving.
