Shrimp scampi with whole wheat rotini/penne (equivalent of 300 calories of whole wheat pasta) **use 1/2 clove for less (not super-strong) garlic flavor**

Recipe Ingredients for Lemon Garlic Shrimp & Pasta

1/2 clove garlic
2 tbsp lemon juice, Canned
1/8 tsp pepper, black
4 1/2 oz Shrimp, Mixed Species - Cooked, Moist Heat
1 tbsp ICBINB! Light
1 tbsp butter without salt
3 oz Organic Whole Wheat Penne

Recipe Directions for Lemon Garlic Shrimp & Pasta

  1. Cook pasta, set aside.

  2. Melt 1 Tbsp butter and 1 Tbsp ICBINB light (I can't believe it's not butter light) in frying pan

  3. Add garlic and saute til golden brown, about 5 minutes. Remove from heat and add lemon juice.

  4. Add shrimp (deveined, peeled, and butterflyed) and toss to coat.

  5. Pour into 8X8 baking pan, arrange in single layer.

  6. Broil 3-4 minutes, turn and broil another 3-4 minutes.

  7. Serve over pasta mixed.
