Delicious! Hint of basil introduces the strong but not sour lemon and the cumin allows the garlic to come through subtly and absolutely deliciously. And the secret ingredient--balsamic vinegar--creates a masquerades itself as lemon with its acidity, gives the hummus a beautiful earthy shade, and truly completes the flavor profile.

Recipe Ingredients for Lemon Garlic Hummus

15 oz chickpeas
1/4 cup water
2 tsp paprika
2 1/2 tbsp lemon juice
3 g basil
2 1/2 cloves garlic
2 tsp cumin
2 tbsp balsamic vinegar

Recipe Directions for Lemon Garlic Hummus

  1. Add garlic and pulse till finely chopped, very small bits.

  2. Combine the chickpeas, paprika, basil, and cumin and add to food processor. Process until combined into clumpy meal.

  3. With the processor on, drizzle in balsamic, and it should begin to ball. Turn it off and add the lemon juice (no pits!) and turn it back on, till juice is combined.

  4. With the processor on, again, begin to drizzle in water--i mean DRIZZLE. Know how you want your hummus--thick or thin--and continually add until it reaches your desired consistency. You may need more than 1/4 cup, you may need less.

  5. Occasionally scrape down the sides, so nothing gets left behind.

  6. Serve with a sprinkling of paprika, dance some pigniolis (Italian in a Mid-Eastern dish... but it's healthy!) or extra chickpeas over the top, and dip pita chips, fresh pita, tortilla, or your fingers and truly enjoy!
