Recipe Ingredients for Lemon Fingers

5 oz. Curd
1 1/2 c. All Purpose Flour
1/2 c. butter
4 tsp. Butter
1/2 c. Sugar
1 Egg
2 tsp. Lemon Peel
1 tsp. Baking Powder

Recipe Directions for Lemon Fingers

  1. Preheat oven to 400F.

  2. Cream butter and sugar until light and fluffy. Add the egg and grated lemon peel. Fold in flour and baking powder, working it into a dough ball.

  3. Divide the dough in half and shape into 2 strips 1"-2" wide (will spread during baking). Place on a greased cookie sheet. Using the handle of a wooden spoon, make a deep groove along the center of each strip. Fill groove in with curd, making sure curd doesn't go over the top of the groove.

  4. Bake for 10-15 minutes. Cool on a wire rack. Sprinkle with powdered sugar. Cut into "fingers" 1/2"-3/4" wide.
