Lemon Drizzle Cake Recipe

A lovely lemon drizzle cake, NOT healthy unfortunately, but a tasty tasty treat for anyone! and will give a LARGE slice each :D

Recipe Ingredients for Lemon drizzle cake

4 oz margarine
6 oz sugar
6 oz self raising flour
4 tbsp milk
1 lemon
2 eggs
3 tbsp icing sugar

Recipe Directions for Lemon drizzle cake

  1. Preheat oven to 160c/350f/gas mark 4

  2. Line a 2lb loaf tin or a 6-7 inch cake tin with baking parchment (make a cover of parchment to put on top if the cake is browning on the top but uncooked)

  3. Cream together the margarine and sugar

  4. Add the milk and eggs little by little to give a smooth mix.

  5. Add the flour and zest of the lemon.

  6. Scrape mixture into tin and bake for approximately 1 hour (use the cover if the cake is going to burn on top withoput being cooked through)

  7. Put the icing sugar in a bowl and gradually add the lemon juice to ensure a smooth mixture.

  8. Whilst cake is still warm, skewer all over with a skewer or a fork and pour the syrup over it.

  9. Leave it to cool IN THE TIN

  10. Remove and enjoy :D
