Lemon Dijon chicken recipe from weight watchers - 2008

Recipe Ingredients for Lemon Dijon Chicken for one

3 tablespoons lemon juice
1 tablespoon dijon mustard
1 tablespoon parsley
1/8 tsp salt
1/8 tsp black pepper
2 tsp olive oil
2 clove garlic
4 oz cooked chicken breast
1/2 cup Spaghetti, Whole-wheat, Cooked

Recipe Directions for Lemon Dijon Chicken for one

  1. Whisk together lemon juice, mustard and parsley. Add salt and pepper to taste. Heat oil is a nonstick skillet over medium high heat. Add garlic and cook unitl fragrant. Add remaining ingredients, toss to cook thoroughly with lemon sauce and heat through. Serve over pasta or rice.

  2. Note: can use uncooked chicken, brown in oil with extra garlic as desired. Add lemon sauce and cook until chicken is no longer pink in the middle.
