Recipe Ingredients for Lemon Dijon Breasts of Chicken

1 1/2 lbs Chicken Breast, boneless skinless
1/4 cup lemon Juice
2 tbs Dijon Mustard
1/4 cup cooking sherry
3 cloves garlic
1/4 tsp dried rosemary
1 tbs cornstarch
1 cup chicken broth, defatted
1 tsp lemon peel

Recipe Directions for Lemon Dijon Breasts of Chicken

  1. mix mustard, lemon juice, cooking sherry, garlic and rosemary in food processor pour over raw chicken and let rest for at least an hour.

  2. Cook in skillet over medium heat until no longer pink reove from skillet, keep warm

  3. put rest of maranade in pan

  4. mix cornstarch with chicken broth pour mix wiht maranade bring to boil stiring constantly cook until thickens return chicken to skillet reheat and serve.
