1 1/2 recipe lemon meringue pie without the crust. One serving is 1/8 of pie.

Recipe Ingredients for Lemon custard with meringue

2 cup sugar
1/3 cup cornstarch
5 eggs
2 tbsp lemon peel
1/3 cup lemon juice
1 tbsp butter

Recipe Directions for Lemon custard with meringue

In saucepan, mix 1 1/2 c. of the sugar, cornstarch, egg yolks, and 2 1/4 c. cold water. Boil over medium heat for one minute, stir constantly. Remove from heat and add lemon peel, lemon juice, and butter. Stir until blended. Pour into greased pie plate. With electric mixer beat egg whites and 1/2 c. sugar until peaks form. Spread meringue over custard and bake at 325 F 17-20 min., until meringue is lightly browned. Remove from heat, cool on wire rack and serve chilled.
