Recipe Ingredients for Lemon Curd

10 large egg yolks
2 1/4 cup sugar
1 cup lemon juice
12 tbsp butter
1/2 tsp salt
2 tbsp lemon zest

Recipe Directions for Lemon Curd

  1. Set a pot with about two inches of water on medium high heat.

  2. Whisk egg yolks in a heatproof bowl vigorously for a few minutes till they turn light in color.

  3. Add sugar in three parts, whisking after each addition.

  4. Add lemon juice, zest and salt and whisk in.

  5. When water begins to simmer, set bowl over pot and whisk continuously till mixture has thickened. Test by dipping the back of a spoon or rubber spatula and if you are able to run your run finger through the mixture and the line stays clean, it's ready.

  6. Take bowl off heat and bit by bit, add tablespoons of butter till all is incorporated.

  7. Run mixture through a sieve into a container. Refrigerate for a few hours, and use.
