Recipe Ingredients for Lemon Curd

3 eggs
3/4 cups sugar
1/3 cup lemon juice
4 tbsp butter

Recipe Directions for Lemon Curd

  1. Whisk the eggs, sugar, and lemon juice together in stainless steel bowl.

  2. Place bowl over pot of simmering water (NOT touching the water) and whisk/stir almost continuously until thickened, about 10 minutes

  3. Add lemon zest (about 1 tbsp) and 4 tbsp butter which have been cut into small chunks

  4. Stir/whisk until smooth

  5. Refrigerate
