Yummy Sweet and Sour tropical lemon bars with lots of healthy ingredients!

Recipe Ingredients for Lemon Curd Bars

3 eggs
1/3 cup honey
1 tbsp lemon zest
1/2 cup lemon juice
6 tbsp coconut oil
1 cup ground almonds
1 cup shredded coconut
1/4 cup honey
1/2 cup coconut oil
2 eggs
4 tbsp lemon juice
1 tsp salt

Recipe Directions for Lemon Curd Bars

  1. use first 5 ingredients to make lemon curd

  2. Pulse almonds and coconut together. Add honey, oil, eggs, lemon juice and salt and pulse a min or so. Put into greased 8 by 8 baking dish and put in hot oven for 15-20 mins - until toothpick comes out clean. SPread curd on top and chill over night.

  3. serve with frozen banana whipped into frozen yogurt (pulse bananas into soft serve)
