Lemon Cupcakes with Lemon Curd Filling

Recipe Ingredients for Lemon Cupcakes

3 stick Butter
3 cup Sugars, Granulated
6 large Egg, Whole
4.5 cup Self Rising Flour
1.5 cup Milk, Nonfat, Fluid
2 tsp Vanilla Extract, Imitation, No Alcohol

Recipe Directions for Lemon Cupcakes

  1. Preheat oven to 350 degrees F. Put Cupcake wrappers in cupcake pans.

  2. Using an electric mixer, cream butter until fluffy.

  3. Add sugar and continue to cream well for 6 to 8 minutes.

  4. Add eggs 1 at a time, beating well after each addition.

  5. Add flour and milk alternately to creamed mixture, beginning and ending with flour.

  6. Add vanilla and lemon juice and continue to beat until just mixed.

  7. Divide batter equally among cups. Level batter in each pan by holding pan 3 or 4-inches above counter, then dropping flat onto counter. Do this several times to release air bubbles and assure you of a more level cake.

  8. Bake for 25 to 30 minutes or until golden brown. Cool in pans 5 to 10 minutes. Remove cupcakes from pans. Cool completely.

  9. Take an apple corer or cupcake corer and remove centers of cupcakes.

  10. Place curd in pastry or ziplock bag and cut one of the corners off.

  11. Squeeze curd into center of cupcake.
