Little lemony cup cakes as a treat. DO as I do and give half away to a friends and freeze the rest :) When I was a little girl we use to call these Fairy Cakes. I don't know why, but then I don't know why we call them Cup Cakes either LOL

Recipe Ingredients for Lemon Cup Cakes

175 gram Flour
175 gram Margarine
175 grams Sugar
175 grams Egg
1/4 teaspoon Baking Powder
1 tablespoon lemon zest
150 grams Butter
300 grams icing sugar
1 tablespoon lemon zest
2 tablespoons lemon juice

Recipe Directions for Lemon Cup Cakes

  1. Heat the oven to fan 160c

  2. Sieve the Self Raising flour and Baking Powder together

  3. Cream the margarine, lemon zest from half a lemon (about a tablespoon) and sugar until light in colour and fluffy

  4. Add the eggs one at a time with a tablespoon of flour to stop the mix curdling

  5. Mix in the remaining flour

  6. Spoon into cup cake cases and bake in the centre of the oven for appox. 15 minutes or until the tops are golden brown and the sponge springy. Also just for good measure insert a skewer, if it comes out clean they're ready! Remove the cakes and cool on a cooling rack

  7. Once the cakes are completely cool you can decorate with the butter icing

  8. To make the butter icing

  9. Cream the butter

  10. Add the icing sugar and cream until about half is mixed then add the lemon zest and juice. Continue to beat until the mix is smooth and creamy

  11. You can then decorate the cakes with by spooning on the icing to the individuals cakes or by piping on.

  12. Either way is there is icing left over you can freeze it for another day.
