Recipe Ingredients for Lemon Cream Scones

2 cups all purpose flour
1/4 cup sugar
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup chopped dried apricots
1 tablespoon grated lemon peel
1 teaspoon grated lemon peel
1 1/4 cups whipping cream

Recipe Directions for Lemon Cream Scones

  1. Chop apricotgs.

  2. Stir together flour, sugar, bakiing powder, salt, apricots and 1 tbsp grated lemon peel.

  3. Add cream and stir just until dough forms.

  4. Pat into a 10 inch circle and cut into 12 pie shaped wedges.

  5. Melt a tbsp or two of butter. Mix in the 2 tbsp sugar and 1 tsp grated lemon peel. Brush butter on top of each scones and sprinkle on sugar/peel mixture.

  6. Bake at 425 for 15 minutes.
