Slow cooked wintery chicken with a hint of lemon

Recipe Ingredients for Lemon Cream Chicken

1198 g chicken, skinless boneless thigh
267 g carrot
91 g spring onion
284 g celery
900 ml chicken broth, low sodium
2 tbsp cornstarch
1/2 cup sour cream, low fat
4 tbsp lemon juice
2 tsp thyme

Recipe Directions for Lemon Cream Chicken

  1. Sear chicken in a pan for 5 mins.

  2. Layer chopped vegetables in slow cooker.

  3. Add chicken, seasoning and broth and lemon juice.

  4. Cook for as long as needed.

  5. When almost ready to serve combine cornstarch with 2 tbsp water. When smooth add sour cream.

  6. Stir mix into stew and cook on high until simmering and thickening.
