Lemon Chicken with Zucchini is a very light and flavorful chicken recipe, done in less than 20 minutes.

Recipe Ingredients for Lemon Chicken with Zucchini

2 breast, bone and skin removed Chicken, broilers or fryers, breast, meat only, raw
3 medium Green Zucchini
3 medium Squash, Summer, All Varieties
0.25 cup Soup, stock, chicken, home-prepared
0.5 NLEA serving Lemons
1 tablespoon Thyme
0.5 tsp Salt, Table
0.5 tsp Pepper, Black
1 tbsp Olive Oil

Recipe Directions for Lemon Chicken with Zucchini

  1. In a bowl combine the salt, pepper, lemon zest and chopped thyme.

  2. Cut the chicken breasts sideways in half, making 4 cutlets.

  3. Sprinkle the salt/pepper/thyme mix on both sides of the cutlets.

  4. Heat olive oil in a skillet and cook cutlets for 5 minutes, turning once.

  5. Stir fry the bite-sized cut zucchini and squash in the same skillet until golden brown. Add chicken stock, juice from 1/2 lemon and simmer until most of the liquid is gone.

  6. Arrange the zucchini mix on a plate and top with 1 cutlet.
