Cubed chicken breast with sliced yellow squash in a lemon pepper marinade.

Recipe Ingredients for Lemon Chicken with Yelow Squash

1 1/4 lb skinless chicken breast
1 lb sliced yellow squash
1/4 cup olive oil
1/4 cup rice vinegar
1/4 cup lemon juice
1 clove garlic
1 large onion
1 tblsp balsamic vinegar
2 tsp butter
2 tsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tblsp oregano
1 tblsp basil
1 tsp cayenne pepper
1 oz Parmesan cheese

Recipe Directions for Lemon Chicken with Yelow Squash

  1. Marinade?Combine olive oil, rice vinegar, lemon juice and spices in a large zip-lock baggie.

  2. Dice chicken into bite-sized pieces and place in bag with marinade.

  3. Marinade chicken several hours.

  4. Preheat large cast iron skillet over medium high heat.

  5. Slice squash into 1/4" slices and par cook in boiling water, drain and set aside.

  6. Dice onion and garlic.

  7. Add butter and 2 tsp olive oil into skillet, coating bottom.

  8. Saute onions until beginning to caramelize, add garlic.

  9. Add chicken minus marinade into skillet. Reserve marinade until later.

  10. Cook chicken until cooked thru (6?7 minutes).

  11. Add squash and cook another minute or two.

  12. Add balsamic vinegar, toss and then add Parmesan cheese, toss to coat.

  13. Serve hot.
