Recipe Ingredients for Lemon Chicken Stir-Fry

0.5 cup Organic Vegetable Cooking Stock
0.25 lemon yields Lemon Juice
8.4 grams Apple Juice
0.5 oz Cornstarch
8 grams Light Soy Sauce
4 grams Chili Sauce
1 cube Bouillon Cubes
2 tbsp Vegetable Oil
16 oz Perfect Portions
2 cloves, raw Garlic

Recipe Directions for Lemon Chicken Stir-Fry

  1. Lemon Sauce:

  2. 1/2 cup vegetable stock or water

  3. 1/4 cup lemon juice

  4. 1 Tablespoon cornstarch

  5. 2 Teaspoons apple juice

  6. 2 Teaspoons light soy sauce

  7. 1 teaspoon chili sauce

  8. 1 chicken-flavored bouillon cube

  9. Chicken and Vegetables:

  10. 2 Tablespoons Vegetable oil

  11. 1 pound Skinless chicken breast, thin strips

  12. 2 cloves garlic, crushed

  13. 4 cups cut up fresh vegetables (green onions, mushrooms, carrots, red pepper, broccoli, snow peas and celery)

  14. 2 Tablespoons of Equal

  15. For Lemon Sauce: Combine vegetable stock, lemon juice, cornstarch, apple juice, soy sauce, chili sauce and chicken-flavored bouillon cube in small bowl until smooth. Set aside.

  16. Heat oil in wok or heavy frying pan over medium heat. Cook and stir chicken and garlic until chicken is no longer pink, about 10 minutes. Remove from pan; keep warm.

  17. Add vegetables. Cook and stir about 3 minutes or until heated through.

  18. Return chicken to pan; add Lemon Sauce. Cook until sauce is thickened and bubbling. Stir in Equal®.

  19. Serve over rice, if desired.
