Recipe Ingredients for Lemon Chicken Stir-fry

1 3/5 lbs boneless chicken breast
3 7/10 oz carrots
5 2/5 ounces zucchini
8 oz mushrooms
4 cloves garlic
1/2 onion
3 T lemon juice
1/2 cup low sodium chicken broth
3 T soy sauce
2 t cornstarch
1 T olive oil
3 scallions

Recipe Directions for Lemon Chicken Stir-fry

  1. Grate 1 tsp lemon zest and set aside. Juice the lemon and whisk 3T lemon juice with broth, woy sauce and cornstarch in a small bowl.

  2. Heat 1T oil in large skillet over medium-high heat. Add chicken and cook 4-5 minutes, stirring until cooked through. Transfer to a plate. Add more oil if necessary. Cut onion 1/2 into 6 wedges. Stir fry until golden, but still firm. Add carrots and mushrooms and stir fry a bit, then add the zuchini, garlic & lemon zest. Return the meat to the pan when the veggies are done to your liking. Add the reserved sauce and cook an additional 2-3 minutes or until it is universally warm. Add scallions, toss and serve.
