Recipe Ingredients for Lemon Chicken Soup

4 stalk, large (11"-12" long) Celery
4 carrot (7-1/2") Carrots
1 lemon yields Lemon Juice
2 serving Free Range Chicken Broth (Pacific Natural Foods)
2 serving Orzo Pasta (Barilla)
16 oz Boneless Skinless Chicken Breast (Great Value)

Recipe Directions for Lemon Chicken Soup

  1. Cook chicken, cut into bite-sized pieces.

  2. Chop celery and carrots, saute with a small amount of oil in a saucepan until mildly softened.

  3. Add broth, vegetables, and chicken in stockpot. Bring to boil and cook for 45 minutes.

  4. At 45 minutes, add orzo and cook for 15 minutes, or until pasta is done.

  5. Add lemon, turn off heat. Let sit for 10-15 minutes to absorb flavor.

  6. Serve when ready.
