A quick meal that has lots of lemony flavor.

Recipe Ingredients for Lemon Chicken and Rice

1 chicken breast
1/4 cup chopped onion
1 medium carrot
1 garlic clove
3 teaspoons extra virgin olive oil
1 teaspoon cornstarch
3/4 cup chicken broth
1 tablespoon lemon juice
1/4 teaspoon salt
3/4 cup uncooked rice
3/4 cup peas

Recipe Directions for Lemon Chicken and Rice

  1. Cook rice separately with a chicken bouillon cube. Steam peas.

  2. In a skillet, cook first four ingredients in olive oil. Sprinkle chicken with lemon pepper if desired.

  3. Combine cornstarch, broth, lemon juice and salt if desired until smooth; add to skillet.

  4. Bring to a boil; cook and stir for 2 minutes or until thickened.

  5. Stir in rice and peas. Remove from the heat; cover and let stand 5 minutes. Fluff with a fork.
