From Cooking Light Very tasty and healthy. Many of my coworkers are jealous when I eat leftovers at work.

Recipe Ingredients for Lemon Chicken and Rice with Artichokes

1 lb chicken breast (1/2 inch strips boneless, skinless)
2 1/4 cups chopped onion
1 cup chopped red bell pepper
2 cups instant brown rice
1/4 cup lemon juice (fresh)
1/4 tsp salt
1/4 tsp black pepper
14 oz low sodium chicken broth
14 oz artichoke hearts (canned, quartered, drained)
2 tbsp parmesean cheese (grated - romano is good as well)

Recipe Directions for Lemon Chicken and Rice with Artichokes

  1. Heat dutch oven over medium-high heat

  2. Coat pan with cooking spray

  3. Saute chicken, onion, and bell pepper 5 min in dutch oven

  4. Stir in rice, lemon juice, salt, pepper, and broth

  5. Bring to a boil

  6. Cover and reduce heat

  7. Simmer 15 minutes or until rice is tender

  8. Stir in artichokes

  9. Cook 1 minute or until artichokes are heated

  10. Sprinkle with chese
