Recipe Ingredients for Lemon Chicken

10 oz chicken breasts
4 cloves garlic, thinly slices
2 c mushrooms
1 spray PAM
1 T cornstarch
1/2 c Chicken Broth
4 T Fresh Lemon Juice
1 T Fresh Lemon Zest
2 T parsley, chopped
1 T thyme, chopped
1/2 t paprika
1/4 t salt
1/4 t pepper

Recipe Directions for Lemon Chicken

Season chicken with salt, pepper, and paprika. Spread garlic over meat. In a non-stick skillet heat oil over mediumhigh heat. Cook chicken about 3 minutes on each side, remove from skillet and keep warm. Add mushrooms to skillet, and cook for 4 minutes, stirring frequently. Add broth and lemon zest and juice to skillet. Dissolve 1 T cornstarch in 2 T water. Add to pan. Bring to a boil, and cook until slightly thickened, about 5 minutes. Lower the heat to medium and return chicken to skillet, heat it through. Add parsley and thyme, and mix. Serve with green salad, quinoa, or brown rice.
