Recipe Ingredients for Lemon Chicken

1 tbl garlic
2 tbl olive oil
1 tsp olive oil
3 cups low fat chicken broth
2 tbl lemon juice, freshly squeezed
2 tsp water
2 tsp cornstarch
1/2 cup cauliflower, pureed
1 tbl parsley, chopped
1/4 cup egg beaters
1 cup flour
1/2 tsp salt
1 tsp garlic powder
24 oz chicken breasts

Recipe Directions for Lemon Chicken

  1. In a heavy saucepan over medium heat, saute the chopped garlic in 1 tsp olive oil until it begins to turn golden brown. Add the chicken broth, turn the heat to high and reduce by half about 8 min. Add the lemon juice.

  2. In a small bowl, combine the water and cornstarch. Slowly stir the cornstarch mixture with the boiling chicken broth. The mixture will thicken quickly. Add the cauliflower puree. Sprinkle in parsley if desired. Cover to keep warm and set aside.

  3. Meanwhile, begin heating the remaining 2 tbl olive oil in a large skillet over medium heat. Whisk the egg beaters in a shallow bowl. Combine the flour, salt and garlic powder on a large plate. Dredge each chicken breast in the seasoned flour and then dip in the egg. Drop the breasts directly into the heated skillet. Saute' 4-5 min per side until the chicken is golden brown and cooked through. Add the lemon sauce and cook 2-3 min more to combine flavors. Serve.
