Recipe Ingredients for Lemon Chicken

1/4 tablespoon chopped garlic
1/2 tablespoon extra virgin olive oil
1/4 teaspoon extra virgin olive oil
3/4 cup chicken broth
1/2 tbsp lemon juice
1/2 tsp water
1/2 tsp cornstarch
1/2 cup cauliflower
1/4 tbsp parsley
1/2 egg white
1/4 large egg
1/4 cup whole wheat flour
1/4 tsp garlic powder

Recipe Directions for Lemon Chicken

Over med-heat, sautee garlic in 1/4 tsp evoo until it begins to brown. Add chicken broth, turn heat to high and reduce to half, about 8 minutes. Add lemon juice. Combine water and cornstarch in a small bowl. Slowly stir into boiling chickne broth -will thicken quickly. Add cauliflower puree. Sprinkle in parsley, if desired. Cover to keep warm, set aside. Heat remaining olive oil in skillet over med-heat. Whisk egg whites and egg in shallow bowl. Combine flour and garlic powder on a plate. Dredge chicken in four then egg mixture then drop into heated skillet. Sautee about 6-7 minutes per side, until chicken is golden brown and cooked through. Add lemon sauce and cook 2-3 minutes more to combine flavors.
