Lemon Chicken Recipe

Tart citrus, a hint of chili and sweet flavors contrast with the colorful red peppers and chicken. This can be served at room temperature or hot.

Recipe Ingredients for Lemon Chicken

1/3 c lemon juice
1 lb chicken breast
3 g chicken bouillon
1/2 c water
3 g splenda
1 T cornstarch
2 T water
3 t canola oil
1 red bell pepper, seeded and julienned
1.66 T ginger
6 shiitake mushrooms
1 red chili pepper, seeded and julienned

Recipe Directions for Lemon Chicken

  1. Using a vegetable peeler, remove the zest from 1 lemon in long strips. Cut each strip into julienne.

  2. Cut the chicken breasts on an angle into very thin slices, 1/8" x 1.5" x 1.5".

  3. To prepare the sauce, combine the bouillon, water, sugar, lemon juice and cornstarch in a bowl. Set aside.

  4. Heat 1 t of oil in a nonstick pan over medium heat. Add the red ell pepper and stir-fry until tender to the bite, 1-2 minutes. Remove from the pan and set aside. Add 1 t oil to the pan. Add ginger and stir until lightly browned, about 20 seconds. Add the chicken and stir-fry until meat loses its pink color and is done. Remove with a slotted spoon. Set aside.

  5. Reheat pan and add remaining oil. Add mushrooms, lemon strips and chili. Stir until the flavors release, 20-30 seconds. Add the stock mixture and cook, stirring constantly, until the sugar dissolves and the sauce is shiny. Add the cooked chicken and red pepper. Toss lightly to coat and allow flavors to mingle.
