Lemon Chicken Recipe

A childhood favorite, this is fairly easy to make but does require pretty constant attention once you start. Best served with a long-grain rice...the gravy is delicious!!

Recipe Ingredients for Lemon Chicken

18 oz chicken breasts
1/4 cup flour
1/2 tsp salt
1/8 tsp pepper
4 tbsp butter
1 cup water
1 chicken bouillon cube
2 tsp lemon juice

Recipe Directions for Lemon Chicken

  1. Skin and bone chicken breasts, cut in half. On waxed paper, mix flour, salt, and pepper; use to coat chicken. Reserve remaining flour mixture.

  2. In 12-inch skillet over medium-high heat, in 3-4 tbsp hot butter or margarine, cook chicken pieces 3 at a time until lightly brown on both sides, adding more butter if needed. Reduce heat to low. Remove chicken to a plate.

  3. Into drippings, stir reserved flour mixture and add water, bouillon, and lemon juice. Stir to loosen brown bits. Return chicken to skillet. If available, thinly slice 1/2 a lemon and top chicken with lemon slices. Cover, simmer 5 minutes or until chicken is fork-tender.
