Recipe Ingredients for Lemon Chicken, Potato, Squash and Zuccinni

2 tbsp extra virgin olive oil
1 Sweet Potato, thinly sliced
1 small Yellow Squash, thinly sliced
1 large Zucchinis, thinly sliced
8 oz asparagus
12 grape tomatoes, quartered
2 cloves garlic, minced
1/8 cup lemon juice
6 fl oz Organic Free Range Chicken Low Sodium Broth
1 tsp lemon pepper
1 tsp black pepper
1 tbsp dried thyme
5 grams Parmesan cheese

Recipe Directions for Lemon Chicken, Potato, Squash and Zuccinni

  1. Preheat oven to 375 degrees.

  2. Coat the bottom of a 13"x9" pan with the 1 tbsp olive oil.

  3. Layer the potatoes, squash, zucchini evenly. Distribute other veggies over top.

  4. Add broth, 1 tbsp olive oil and lemon juice over top.

  5. Add dry spices and top evenly with cheese.

  6. Bake for 40 minutes.
