Recipe Ingredients for Lemon Chicken Dijon for one

1 chicken breast, skinless, boneless
2 cloves garlic, minced
1 tbsp dijon mustard
1 cooking spray
1 cup chicken broth
4 lemon wedges

Recipe Directions for Lemon Chicken Dijon for one

  1. Preheat toaster to 400F.

  2. Spray pan with PAM.

  3. Cut chicken in to cubes and saute in toaster-proof pan until just brown.

  4. Mix together chicken broth, lemon juice (keep rinds), garlic, and dijon mustard.

  5. Place over chicken once it is browned. Add lemon rinds facce down. Bring to a boil for about 2 minutes.

  6. Place in toaster for about 10 minutes, until sauce thickens.
