Baked chicken thighs with homemade creamed corn

Recipe Ingredients for lemon chicken with creamed corn

8 thigh, bone removed Chicken, Thigh
1 fruit (2-1/8" dia) Lemons
1 tbsp Olive Oil
3 cloves, raw Garlic
4 ear Corn On The Cob
1 cup, fluid (yields 2 cups whipped) Cream, Fluid, Heavy Whipping

Recipe Directions for lemon chicken with creamed corn

  1. preheat oven to 220C.

  2. Place the lemon slices on a baking tray, top with chicken.

  3. Drizzle with half the oil and sprinkle with salt and pepper.

  4. Roast for 27-30 mins or until cooked through.

  5. While chicken is cooking, heat remaining oil in a frying pan.

  6. Add the garlic and cook for 1-2 mins.

  7. Add the corn and cream, bring to the boil and cook for 6-8 mins or until thickened and reduced.

  8. Serve the creamed corn with the chicken, lemon, and a side of vegetables.
