Recipe Ingredients for Lemon Chicken w/ Bow Ties

2 tbsp flour
2 chicken breast
1 3/4 tsp salt
10 oz spinach
1 medium onion
1 1/2 cups chicken broth
1 tsp. grated lemon zest
3 tbsp. fresh lemon juice
2 tsp. minced garlic
1/4 tsp. black pepper
2 tsp. thyme
2 tsp. unsalted butter
3/4 lb. pasta
1 cooking spray

Recipe Directions for Lemon Chicken w/ Bow Ties

  1. Place 1 Tbsp flour on sheet of waxed paper; coat chicken; shake off excess. With cooking spray, coat large nonstick skillet; heat over medium-high heat. Add chicken; cook, turning once, for 4 minutes or until browned. Cover; reduce heat to medium-low; cook, turning occasionally, for 5 to 7 minutes or until no longer pink at center. Remove to cutting board. Let cool 5 minutes. Slice in. think; halve slices lengthwise.

  2. Meanwhile, in large pot, bring 4 qt. Water and 1 tsp. salt to boil. Add pasta; cook according to package directions. Add spinach; cook 10 seconds or until wilted. Drain; return to pot.

  3. Wipe out skillet; with cooking spray, coat skillet. Heat over medium-high heat. Add onion; cook, stirring occasionally for 7 minutes or until well-browned and caramelized. Stir in 1 cups broth, the lemon zest and juice, garlic, pepper and remaining tsp. salt; simmer 2 minutes.

  4. Whisk together remaining cup broth and remaining 1 Tbsp. flour in small glass measure; stir into simmering mixture. Simmer, stirring, for 2 minutes or until slightly thickened. Add thyme and butter; swirl skillet until butter melts. Stir in chicken. Remove from heat.

  5. Pour chicken mixture over pasta and spinach in pot; toss to mix. Spoon into 4 pasta bowls.
