Recipe Ingredients for Lemon Chess Pie

1 pie crust, standard-type
3 eggs
1/2 c lemon juice
1 tsp lemon rind
1 tsp cornmeal
1 T self-rising flour
1/2 stick butter
1 1/4 c sugar
1 T water

Recipe Directions for Lemon Chess Pie

  1. In small bowl, beat eggs until fluffy. Add water and lemon juice & zest. Set aside.

  2. In large bowl, cream butter, sugar, cornmeal and flour.

  3. Add lemon and egg mixture and mix well.

  4. Pour mixture into unbaked pie shell and bake 30-40 min at 350F. Pie is done when knife inserted in center comes out clean. Top will be golden brown.
