A delicious tea cake that's not overly sweet.

Recipe Ingredients for Lemon Chai Tea Cake


Cake:
3 cups cake flour, sifted
1 1/2 tsp baking powder
1/2 teaspoon baking soda
1 pinch of salt
1/4 cup butter
3/4 cup applesauce
1 1/2 cups sugar
1 teaspoon vanilla
2 eggs, beaten
1 tablespoon golden flax seed meal, mixed with 3 tablespoons water as an egg replacement
4 oz. (1/2 cup) chai tea, super-brewed
3 tablespoons lemon juice
1 teaspoon lemon extract

Glaze:
1 T. butter, melted
1/4 cup lemon juice
1 cup confectioners' sugar (or however much is enough to make a thick glaze)

Recipe Directions for Lemon Chai Tea Cake

  1. Sift dry ingredients together.

  2. Cream butter and applesauce with sugar and vanilla until fluffy. Add eggs and beat well.

  3. To make super-brewed Chai tea: brew 3 packets of Chai tea in 1/2 cup of just-boiled water for 20 minutes. Mix tea and lemon juice.

  4. Add dry ingredients to creamed mixture alternatingly with tea mixture. Beat well after each addition. Add lemon extract.

  5. Grease a bundt pan and flour it. Pour in batter.

  6. Bake at 350 F for 1 hour.

  7. Cool for five minutes and then turn pan upside down

  8. Sprinkle with confectioners sugar or glaze with lemon glaze.
