Recipe Ingredients for Lemon Caper Chicken

454 g boneless skinless chicken breasts
1/4 cup onion, or shallot, minced
1/4 cup lemon juice
2 T capers
1 cup low sodium chicken broth

Recipe Directions for Lemon Caper Chicken

  1. Dredge chicken in flour and pan fry in olive oil % minutes on a side until golden.

  2. Saute' onion in fat for 1 minute then add chicken broth. bring to a boil on high heat. Add capers and lemon juice and reduce to thicken. Remove from heat add butter and return breasts to pan to coat.
