For those summer days you want to serve something sweet and not feel bad about it.

Recipe Ingredients for Lemon Cake

1 1/2 c Flour (mix whole wheat and white)
2 tsp Baking powder
1/2 tsp salt
1 c fat free Yogurt
2 eggs
3 tbsp lemon zest
1 c Splenda (I want to try aguava)
1 tbsp lemon juice
1/3 c oil
1 tsp Vanilla
1/2 c lemon juice
1/2 c Splenda

Recipe Directions for Lemon Cake

  1. - Preheat overn 350 ( put in loaf pan - pam/flour/parch. paper as a lot of oil cut out)

  2. - sift dry ingred. in one bowl.

  3. - mix splenda w/ eggs beat for 2 min.

  4. - add yogurt, lemon zest, lemon juice, oil, van...

  5. - blend in dry ingred...do not over mix (whatever that means...so be gentle??)

  6. - bake for 45 min

  7. For topping: 1/2 C lemon juice

  8. 1/2 C Splenda (again I want to try aguava) disolve low heat

  9. - let cake cool for~10min - take out of pan and pour syrup over.
