A simple lemon cake. This cake is denser than boxed cake mix cakes, with a very fine crumb.

Recipe Ingredients for Lemon Cake

1 fruit+2-1/8"+dia lemon
3/4 cup flour
4 eggs
2/3 cup sugar
1/2 tsp Vanilla Extract
1 tbsp sugar
4 tbsp butter

Recipe Directions for Lemon Cake

  1. Preheat the oven to 350.

  2. Grate the zest from the lemon, and juice it. You should have about 1/4-1/2 cup juice.

  3. Separate the eggs. Beat the egg whites with a pinch of salt until they get foamy. Then sprinkle 1 tbsp sugar over them, and beat until glossy and stiffer.

  4. Beat the egg yolks and the 2/3 cup sugar together. Add the lemon zest and juice. Beat some more. Add the vanilla. Beat some more. Beat in the flour.

  5. Carefully fold the egg whites into the egg yolks, 1/4 at a time. Try not to deflate the egg whites.

  6. Bake for 25 minutes, or until a knife comes out clean.
