Recipe Ingredients for Lemon Butter

2 sticks butter
3 large eggs
2 cups sugar
1 cup lemon juice
1 tbsp lemon zest

Recipe Directions for Lemon Butter

  1. Finely chop lemon zest. Chop butter into small pieces.

  2. In the top of a double boiler over medium heat, beat eggs until frothy.

  3. Add sugar and stir to mix well.

  4. Add butter, lemon juice and zest.

  5. Continue to stir gently until mixture thickens to coat spoon (approx. 15-20mins) and then for 2 more minutes. Don't allow to boil.

  6. Fill sterilized medium jars. Refrigerate when cool. Eat within 1-2 months.
