A fresh tasting lemon cake recipe that can be used as cupcakes too!

Recipe Ingredients for Lemon Bunt Cake or Lemon Cupcakes

2 1/2 cups flour
1 cup honey
1/2 cup sugar
3 tbs. baking powder
3/4 cup Orange Juice
3/4 cup extra virgin olive oil
1 1/2 tsp fresh lemon juice
4 large egg whites
3/4 cup powdered sugar
1/8 cup fresh lemon juice

Recipe Directions for Lemon Bunt Cake or Lemon Cupcakes

  1. Set oven to 325 degrees. Mix the flour, sugar, honey, baking powder, orange juice, evoo, lemon juice and egg whites for 3-4 minutes with mixer. Bake for 45 minutes (25 for cupcakes). When done, poke holes in the top of the cake/cupcakes with a tooth pick all over.

  2. In a separate small bowl, combine the powdered sugar with the fresh lemon juice until well mixed. Take a spoon and pour on top of cake/cupcakes, all over top (s)! Let stand and cool for about 10 minutes or wrap with plastic wrap and place in refrigerator till ready to serve.
