Recipe Ingredients for Lemon and Broccoli Soup

1/2 stick (50g) unsalted butter
1 leek
2 cloves garlic, crushed
4 cups fresh broccoli, chopped
8 cups (2L) vegetable broth
8 cups (200g) spinach
2 cups (500ml) light cream
2 tbsp lemon juice
2 tsp sea salt
2 tsp pepper
4 tbsp shredded cheddar cheese

Recipe Directions for Lemon and Broccoli Soup

Heat a deep med saucepan over high heat. Add butter, leek, garlic and cook. Stir for 5 mins or until leek is tender. Add the broccoli and stock, bring to a boil and cook 8 - 10 mins or until the broccoli is tender. Add the spinach and cool for a further 1 - 2 mins. Use a hand held blender to blend the soup until smooth. Stir in the cream, lemon juice, sald and pepper. Ladle into bowls and top with cheese. serves 8.
