Recipe Ingredients for Lemon Broccoli Risotto

1 onion, small
2 garlic cloves
2 cups Broccoli florets
1/4 cup Parsley, Italian fresh
2 tbsp olive oil
2 tbsp lemon juice
1 cup lemon zest
1 cup rice, arborio, uncooked
3 cups stock, vegetable
1 cup peas, frozen
1/3 cup cheese, parmesan graded
1/4 tsp pepper, black

Recipe Directions for Lemon Broccoli Risotto

  1. Prepare the vegetables:

  2. a. onion: peel and chop finely.

  3. b. garlic: peel and mince.

  4. c. Broccoli: wash and cut the florets into bite size pieces.

  5. d. Italian Parsley: wash and chop finely

  6. In a large frying pan, heat the oil over medium-high heat. Add the onion and 2 garlic cloves (minced), and saute until tender (about 2 minutes).

  7. Add the 2 Tbsp lemon juice, 1 cup lemon zest, and 1 cup rice and saute, stirring frequently, until rice is golden brown.

  8. Add 1/2 cup broth, reduce heat to low, simmer until all of the liquid is absorbed, Continue adding stock 1/2 cup at a time, allowing all of the additional to be absorbed before the next is added.

  9. With the last 1/2 cup addition, add the broccoli and peas. Cook until all of the liquid has been absorbed and the vegetables are tender (about 5 minutes).

  10. Remove from heat, add parmesan cheese, parsley, and pepper and stir until cheese is melted.
