Recipe Ingredients for Lemon Blueberry Yogurt Loaf

1 1/2 cup Gold Medal All Purpose Flour
2 fruit (2-1/8" dia) Lemons
2 teaspoon Baking Powder
1/2 tsp Salt, Table
6 oz(170 g) Light 'n Fit Nonfat Vanilla
1 3/10 cup Sugars, Granulated
3 large Egg, Whole
1/2 tsp Vanilla Extract
1/2 cup Vegetable Oil, Canola
1 1/2 cup Blueberries
1 cup Confectioners Sugar

Recipe Directions for Lemon Blueberry Yogurt Loaf

  1. 350 degree oven, grease and flour one loaf pan.

  2. Sift dry ingredients together.

  3. Whisk yogurt, 1 cup sugar, eggs, lemon zest from 2 lemons, vanilla, and oil.

  4. Slowly whisk in dry ingredients.

  5. Rinse blueberries and toss them in 1 Tbsp of flour, then fold them gently into batter.

  6. Pour into pan and bake for 50 to 55 minutes. Let cool for 10 minutes then remove from pan onto rack.

  7. While loaf is cooling take 1/3 cup sugar and 1/3 cup lemon juice and heat over medium heat until sugar dissolved. Brush this mixture over the top and sides of loaf.

  8. Let cool completely. Mix confectioner sugar with 2 to 3 Tbsp lemon juice. Mixture should be thick but pourable. Pour over top of loaf and let drizzle down the sides. Let sit 15 min. before serving.
